big chokes

Large artichokes take 40-45 minutes to cook tender. I also put garlic and oil in the water while cooking (covered pot) Then, get some \"Carl\'s gourmet lemon-garlic seasoning\", mix a couple teaspoons in 1/3 cup mayo, add a little lemon juice, and that makes the best dip! Also can use it on asparagus or broccoli etc. - helenemw

Mayo....yuk

I can\'t stand dipping anything into mayo, but my artichoke recipe does not need it, or butter, or parmesan cheese sauce or any of that stuff. Here it is: Prepare the artichokes as usual. To the pot add a garlic clove or two, some lemon juice, a bay leaf, salt and a dollop of oil. Five things. Cook until the artichokes are tender. That\'s it. They are delicious. Vary the ingredients to your taste, but you will never need mayo again. - overdye

Thanks for the article. Artichokes are one of my favorite underated foods so I am glad you wrote about them. They actually make some very pretty flowers, too. And, they grow quite well in this area. - purplegirl
